Chimichurri Sauce - From Argentinian cuisine to your fitness kitchen
Chimichurri Sauce by FoodSeries is a dressing-style sauce with a liquid consistency and sweetener, made from the traditional recipe of the classic Argentinean chimichurri but in a fitness version without fat emulsion, providing only 2kcal per serving and containing no fat or carbohydrates.
There are two main variations of chimichurri: those considered 'strong' because they contain large amounts of ground chilli pepper, chorizo pepper and hot spices; and the 'mild' varieties, made with less hot spices and more suitable for all kinds of preparations. At HSN, we have opted for the mild variety of chimichurri, which, although spicy, does not sting excessively.

We have used natural ingredients, such as real vinegar, onion or garlic and chorizo peppers in the basis of our preparation.
We did not want to prepare the sauce with artificial flavourings to give it flavour because we believe that the result is far from that of the authentic classic recipe. The addition of these foods, such as vegetables, only enhances the preparation as they add few calories but make an excellent change for the better in consistency and flavour.

Liquid consistency texture. How to use it?
If you are not used to using this traditional Argentinean sauce, you may be expecting a sauce with a dense consistency like ketchup, but the truth is that the natural density of chimichurri is not like this.
Since its base preparation is vinegar, its density is liquid and resembles a salad dressing, and the usual way to use it is to serve it in a small bowl next to the diner's plate.
In many recipes, such as grills and roasts, it is used by simply adding it on top of the meat, before preparing or already prepared. Chimichurri is also widely used in Mexico with Birria tacos. For this dish, it is not poured over the taco or into the filling, but the taco itself is dipped into the bowl of sauce to fully infuse it with flavour and a delicious spicy taste.

We often talk about chimichurri as the perfect complement to roast because it enhances and intensifies the umami of the meat. It is true that it is ideal for meats but it can be used for many other dishes.
Did you know that chimichurri is an ideal way to add flavour to hake even in cutting diets?
Pour about 50ml on a plate, and dip the cut white fish in the sauce. Cover with cling film and leave to marinate in the fridge overnight.
The next day take it out and let it stand at room temperature for at least 10 minutes before cooking. It is delicious baked or grilled, adding just a small amount of oil and a garnish to its preparation.
